1 lb navy beans (2 cups)
1 lb ham (or ham on bone)
10 cups cold water
1 teaspoon salt
1 large diced carrot
1 large onion, chopped

Roux:
3 tablespoons oil
3 tablespoons flour
Water
2 teaspoons paprika

Directions:
Directions:
Soak beans overnight in cold water to cover (enough to allow for expansion). Add ham and other ingredients and simmer gently covered for 2 to 3 hours, stirring occasionally. Lift out meat and cut into pieces. Mash beans with potato masher.

Make a roux with the oil and flour. Stir until lightly browned. Add enough additional water to make a smooth paste. Add 2 teaspoons paprika. Stir quickly into the soup to avoid lumps.Taste the soup and add additional salt if required. If the soup is too thick the next day, you may add water.
