3 to 4 pound young hen
2 teaspoons salt
4 carrots
3 to 4 quarts water
1 parsley root
½ stalk celery
1 small onion
1 tablespoon chicken base (optional)

Directions:
Directions:
Clean the chicken. Put on to boil in cold water. Skim off froth and then cook over low heat. Add vegetables and salt. Cook 2 to 3 hours until meat is tender. Strain. Skim off any fat. Taste. Add homemade noodles or cream of wheat dumplings.

Beef soup:
Use 3 pounds beef chuck instead of chicken.

Personal Notes:
May use chicken parts or bones instead of a whole chicken. May also cook with three pounds beef chuck. Oma Uldrian would take the cooked beef chuck and fry with onions. This was a hearty meal when they lived in Staffelstein, Germany.
