1/4 c. butter, melted
1/4 c. flour
~1 1/4 c. milk
chunks of Velveeta to taste/consistency
2 c. macaroni noodles (uncooked)
bread crumbs (optional)

Preheat 350ºF.

(The sauce is easy to do in microwave, but can be done on stovetop, just be careful not to boil.)

Melt butter, then stir in flour until smooth. Add milk and mix thoroughly. Add chunks of Velveeta and stir into milk mixture, heating gently (can do this in double boiler to reduce risk of boiling/scalding), stirring frequently. I start with 2-3 slices of Velveeta, broken into chunks, then add another slice or so as it melts and thickens.

Cook noodles according to package directions and drain. Pour noodles into greased (1.75-2 qt.)casserole. Pour cheese sauce over noodles and mix well. Add chunks of Velveeta into noodles if desired. Sprinkle bread crumbs on top if desired. Cover and bake at 350 degrees 20-30 minutes, until top is golden brown and mixture is bubbly.
