6 oz. All-purpose GF Flour
5 ½ oz. Greek yogurt
1 tsp. baking soda
finely grated rind of 1 small orange
2 oz. clear honey
1 ½ oz. sugar
2 oz. coconut oil, melted
1 egg, beaten
Warmed honey, to glaze

200 g / 7 oz. fresh strawberries
2 tbsp. clear honey
2 tbsp. orange juice

Preheat the oven to 400. Lightly grease 6 – 10 muffins tins. Sift the flour and baking soda into a bowl and then add the honey, sugar, coconut oil, egg, yogurt and orange rind, mixing lightly.

Spoon the mixture into the tins (batter is very thick). Bake in the oven for about 10 – 12 minutes until risen, firm and golden.

Meanwhile, for the salsa, hull and roughly chop the strawberries. Warm the honey and orange juice in a small pan, without boiling, then pour over the strawberries and stir lightly.

Remove the muffins from the oven, lift carefully from the tins and brush the tops with the melted honey to glaze. Serve warmed with a spoonful of strawberry salsa on the side.
