1 pkg grape tomatoes slice in half
1 - 19 oz. canned lentils drained and rinsed *Our Compliments brand (not Unico or Gouda – they are mushy)
2-3 fresh peppers chopped (use orange or yellow for contrast to red tomatoes)
½ cup feta cheese
½ cup chopped fresh cilantro
½ cup chopped red onion
1 tsp cumin
¼ tsp cayenne pepper
½ tsp salt
3 tbsp olive oil
zest of one lemon
juice of one lemon

Directions:
Directions:
Mix spices, olive oil and lemon juice in bowl with whisk. Add remaining ingredients and blend with spatula.

You can make this a day or two ahead of time. You may want to add the feta cheese and pepper just the night before. The zest and juice of the lemon and cilantro make this salad fresh tasting.
