1 boneless pork loin roast, about 3 to 4 pounds
2 tablespoons olive oil
2 teaspoon salt
1 teaspoon pepper
1/2 teaspoon ground allspice

Directions:
Directions:
Bring por roast to room temt. generously rub with olive oil. In a bowl mix together spices and rub al over the pork roast. Put in a shallow pan or on a rack. You can put it on celery stocks in you don't have a rack to fit your pan. Roast at 325º for about 40 minutes per pound or until pork registers at least 155° on a thermometer.
