2 T. olive oil
2# pork spareribs, cut into pieces
1 medium onion, finely chopped
2 cloves garlic, minced
1-28 oz. plum tomatoes
1-6 oz. tomato paste
6 oz. of water (using the tomato paste can as a measure)
1 tsp. salt
1/2 tsp. freshly ground black pepper
1 tsp. minced garlic
1 1/2 tsp. fennel seeds

Directions:
Directions:
Heat the oil in a 5-quart casserole over medium-high heat; brown the spareribs.
Add the onion and 2 cloves minced garlic and sauté until the onion is transparent.
Add the tomatoes, crushing them in your hand as you add them, and the liquid from the can.
Add the tomato paste and the water.

Raise the heat and add the remaining ingredients.
Bring to a boil, stirring to mix.
Reduce the heat and simmer, uncovered, until the meat starts to fall away from the bone, about 2 hours.
Stir often to keep the sauce from sticking to the bottom of the pan.
