4 skinless mahi-mahi filets, approx 2 lbs
2 t. kosher salt
1/2 cup diced red onion
1/4 cup freshly squeezed lime juice
1/4 cup freshly squeezed orange juice
1 t. minced jalepeno
1/4 cup dark brown sugar
1/4 cup tequila
1 T olive oil
1/4 cup freshly chopped cilantro

rub filets with kosher salt. set aside. in bowl, combine the onion, juices, sugar and tequila. mix to dissolve the sugar and add filets to the bowl. marinate in refrigerator for 2 hrs. remove filets from the marinade and set it aside. pat filets dry and lightly coat with olive oil. heat grill to high and place filets over direct heat until cooked through. 3-4 minutes per side. while the fish is cooking, transfer the marinade to a saucepan and heat until reduced to about 3/4 cup. transfer filets to serving platter and divide sauce evenly among then. top with chopped cilantro
