Lamb chops, 1½ -2 inches thick
Olive oil
Salt and black pepper
Fresh rosemary

Pat lamb chops dry.
Rub with olive oil.
Season with salt and black pepper.

Grill: place on medium heat and grill about 5 minutes a side. Place a sprig of rosemary on top of each chop before you flip them. Grill to an internal temperature of 145 degrees and let rest for about 5 minutes before serving.

On stove: Preheat oven to 400 degrees.
Heat 1 tbsp olive oil in oven proof skillet preheated over high heat.
Place lamb chops into hot skillet and sear on both sides, about 2 minutes a side.
Put sprig of rosemary on each chop.
Place skillet in oven for another 8-10 minutes, until internal temperature reaches 145 degrees (medium rare). Let rest for 5 minutes before serving.
