2 lbs. pork tenderloin
1/4 c. softened butter
Salt and pepper to taste
1 tsp. thyme
2 tsp. garlic powder
1 (18 oz.) jar apricot preserves
2 tbsp. honey
1/4 c. sherry

Directions:
Directions:
Preheat oven to 350º.

Spread butter over pork tenderloin. Season with salt, pepper and thyme.

Place pork in oven for 30-40 minutes.

Combine garlic powder, preserves, honey and sherry in a bowl.

Remove pork from oven and brush with apricot sauce. Return to oven and continue to roast. Baste occasionally with remaining sauce for 15 minutes.

Pork tenderloin should register 160ºF in center.
