Ingredients:  
1/4 cup extra virgin olive oil (or you can use
bacon grease, fry 6 slice of bacon, use the
grease and save the bacon to crumble into the
gravy)
1/2 cup self rising flour
1 medium onion (chopped)
1 large can of diced tomatoes with juice (or you
can use 5 ripe tomatoes peeled and diced)
2 cups cold water
salt and pepper to taste

Directions:
Directions:
Cooking with olive oil is healthy. In a skillet,
heat the oil, add flour, stir until dark brown but
not burnt. Add tomatoes, 2 cups water, salt,
pepper and onions. Let it simmer until onions are
cooked. Stir often to prevent sticking. If gravy get
too thick add small amounts of water. Can be
served over hot biscuits or rice.
