2 tbs. Butter
1 cup Chopped Onion
2 tbs. Flour
4 cups Potatoes (diced and peeled)
1/2 cup Hot Water
3 cup Milk
3/4 tsp. salt
1/8 tsp pepper

Directions:
Directions:
In a deep 12 in. skillet, melt butter. Add onion,
saute until limp. Sprinkle with flour, stirring until
blended.
Stir in potatoes and hot water.
Reduce heat to low, cover and simmer for 20 -25
minutes or until potatoes are tneder, stirring
occasionally.
If potatoes are browning, lower the temperature.
Stir in milk, salt and pepper. Bring to a boil.
Cover and simmer for 5 minutes.
