1\4 c. butter
1 c. onions, finely chopped
1 c. uncooked rice
3 cans consomme soup
1 can mushroom pieces (drained)

Directions:
Directions:
Preheat oven to 400. Melt butter in skillet. Add
onions and brown lightly. Add tsp salt if desired.
Wash and drain rice. Add to onions and stir while
browning lightly. Transfer to casserole dish and
add consomme. Cover and bake in oven for 20
min. Add mushrooms and cook for 30 more min.
If too juicy, remove top and cook until ready.
