10 pounds ground chuck beef
1 1/2 cups chili powder
1/4 cup red pepper
1/4 cup salt
1/4 cup cumin powder
1/8 cup garlic powder
1/4 cup oregano
3 tablespoons paprika

meal mixture:
5 pounds flour meal (masa hara)
1/4 cup salt
1 cup Crisco or oil
1/4 cup baking powder

Directions:

Meat mixture: mix all ingredients cover in 1 gallons of water
and cook in a large container, 15 or 20 minutes,
drain meat save the liquid.

meal mixture: mix with liquid from meat until consistency of
dough

to make tamales:
Boil sucks and clean them by rinsing with cold
water. Let them cool and keep them cover in
water. Take a shuck using a butter knife spread a
thin layer of the meal mixture on the wide end of
the shuck about 5 inches down and 3 inches
across. Place about 2 ounces of the meat mixture
on the meal mixture. Roll it up and fold the
bottom excess end of the shuck up over the
tamale. Tie 3 tamales to a bundle, folded ends
pointed in the same direction. Place standing up,
folded ends down in a large boiler and cover with
the rest of the liquid. Cook 15 ? 20 minutes. Let
them cool. To freeze, place upright in large zip
lock bags, 1 dozen tamales in each bag.
