1 envelope gelatin
1 tbsp cold water
1 cup boiling water
1 cup sugar
1/2 cup lemon juice
1 cup whipping cream
1 - 11 oz tin mandarin orange pieces (drained)

Pie Crust
1 1/2 cups graham wafers (crushed)
1/4 cup sugar
1/4 cup melted butter

Pie Crust:
1. Crush graham wafers. Mix in sugar. Add melted butter.
2. Pat into pie plate and bake at 350 degrees for 8 to 10 minutes until brown.

Pie Filling:
1. Soften gelatin in cold water, then add boiling water. Add sugar and stir until dissolved. Finally, add lemon juice, stir and refrigerate until slightly thickened. (do not allow the mixture to set)
2. Whip cream until thick.
3. Fold gelatin mixture into whipped cream. Then stir in orange pieces. Mix lightly.
3. Pour mixture into the pie shell and spread evenly.
4. Let set for 4 hours.
