Dump into a glass or ceramic pot or bowl (not metal)
2 cups thick potato water
2 tablespoons sugar
2 cups flour (more or less)
1/2 teaspoon yeast

Directions:
Boil potatoes with jackets on until they fall to pieces. Lift skins out; mash potatoes making a puree, Cool. Add more water to make sufficient liquid, if necessary. (The richer the potato water, the richer the Starter.) Put all
ingredients into a glass or ceramic pot or bowl. Beat until it is a smooth creamy batter. Cover. Set aside in warm place to start fermentation. Yeast is optional - use yeast only to speed the action.

There are a number of ways to start the initial soured dough batter. It can be made from buttermilk, yogurt or potato water. The potato-based sourdough is considered by some as the most stable. Incidentally, when you are beginning a new starter, if it turns moldy, throw it out, scrub everything thoroughly and start over. Later to guard against any such contamination, from time-to-time, pour the batter into a clean pot or cover loosely, never tightly except in transport - the sourdough has to breathe.
