10 or more Jalapeno chilies
Onion Ring batter
Frying Oil

Heat oil in deep fryer or pan that handles heat. Slice chilies in rings, discarding stem. Make sure that the chilies are very dry before going in to the batter. Dredge in batter and fry until golden. Salt as soon as they come out of the fryer. Dip in your favorite sauce – see below for ideas.
** You can use a packaged onion ring batter or make your own by mixing 2 cups of flower, salt, pepper, garlic powder, (Cheyenne pepper if you like spice) and just enough water or milk to make it thick. I like the batter to be about like pancake batter. Really dunk the chili slices before dropping them in to the fryer. If you have too much batter, you can fry some onions, mushrooms, zucchini etc. and make a basket of deliciousness!

• Mix Mayonaise with Chipotle Tobasco
• Mix Mayonaise with your favorite BBQ sauce
• Mix Mayonaise with Dijon Mustard and a smidge of honey
• Ranch Dip
• Blue Cheese Dip
