3 c all bran
1 c boiling water
2 1/2 c flour
2 1/2 tsp baking soda
1 tsp salt
1/2 c shortening
1 c sugar
2 eggs
2 1/2 c buttermilk
1 c raisins or dates

Directions:
Directions:
Combine 1 c bran and boiling water. Set aside to cool. Mix together flour, soda and salt and set aside. In large bowl, cream together shortening and sugar. Add eggs one at a time, beating well between each addition. Add dry ingredients alternately with buttermilk stirring only until combined. Stir in 2 cups of bran into cooled bran mixture and raisins. Mix all together.

Cover tightly and let stand overnight in refrigerator before baking. Keeps up to 3 weeks. Do not stir.
Bake @ 400º for 30 mins.

Alternate: reduce buttermilk by 1/2 c and add 1/2 c of molasses.
