3 cups flour
3 cups white sugar
4 1/2 cups grated carrots
2 1/4 cups oil
6 eggs
3 tsp baking powder
3 tsp baking soda
3 tsp cinnamon
1 1/2 tsp salt
1 1/2 cups raisins or chopped nuts
Cream Cheese Icing:
250 gm package cream cheese
1/4 cup butter or margarine
1 tsp vanilla
2 cups icing sugar

Directions:

Mix flour, baking powder, baking soda, cinnamon, salt. Combine sugar, oil and beat. Add eggs and combine the two mixtures. Add nuts or raisins and carrots. This makes one 9X12 inch and one 8X8 inch or a large 12X18 inch pan with sides. Bake at 350F for about 50 minutes. Cool before icing. To make the cream cheese icing beat together the cream cheese, butter and vanilla. Add icing sugar gradually, beating with electric beat until fluffy.
