1 lb. cooked penne
4 c. milk
1/2 tsp. salt
1/4 tsp. cayenne
8 tbsp. margarine (not butter)
6 tbsp. flour
1/2 lb. asiago cheese, shredded
1/2 lb. sharp cheddar, shredded
1/2 lb. fontina cheese, shredded
1/2 c. heavy cream

Heat milk in a large pot on medium heat until boiling, stirring constantly.
In a separate sauce pan, melt margarine. Once melted, slowly whisk in the flour a tablespoon at a time until blended. Cook the flour mixture for 3-4 minutes... don't let it get too brown.
Slowly add the flour mixture to the milk and whisk until there are no lumps. Then stir in the salt & cayenne. Stir the entire mixture over medium heat until thick, approximately 8 minutes.
Preheat the oven to 350º.
Add 1/4 cup of each of the cheeses to the milk mixture. Stir until melted.
Add to the cheese mixture the drained, cooked noodles. Stir until combined.
In a 13"x9" baking dish, spray the bottom with pan spray or line with foil, then spray. Put half of the noodle mixture in the pan and spread evenly. Sprinkle the rest of the cheese of the noodles in the pan then top with the rest of the noodle mixture.
Carefully pour the heavy cream over the top of the noodles.
Bake the mixture for 30-35 minutes, until bubbly.
Let cool for at least 15 minutes before serving.

Be very careful to buy fontina cheese only, not fontinella... they aren't quite the same.
There is a lot to do in the recipe... it might help to have a friend to lend an extra hand.
This dish is rich, but very delicious!
