1 large cauliflower

Sauce:
3 tbsp butter
3 tbsp flour
2 cups half and half
5 tbsp horseradish
1 tsp white or apple cider vinegar
1 cup grated Fontina cheese

Topping:
1½ tbsp butter
1/2 tbsp Dijon mustard
1 tbsp horseradish
1 cup breadcrumbs
salt and black pepper to taste
pinch of ground nutmeg

Directions:
Directions:
Preheat oven to 375 degrees.
Cut cauliflower into florets and put in either a 13x9 inch or 9x11 inch pan (it depends on the size of the cauliflower, you want the pan to be pretty full).
Melt three tbsp butter in skillet.
Add 3 tbsp flour.
Stir 2 minutes.
Gradually whisk in 2 cups half and half.
Mix in 5 tbsp horseradish and 1 tsp vinegar.
Season with nutmeg, salt and black pepper.
Pour over cauliflower.
Sprinkle with the Fontina cheese.

Make topping, by melting 3 tbsp butter in skillet, mix in Dijon mustard, 1 tbsp horseradish and breadcrumbs and saute until brown. Sprinkle on top of casserole.

Bake 25-30 minutes or until cheese is melted and crumbs are toasty brown.
