12 oz. Polish Kielbasa sausage, diced
1 1/4 c. chicken broth
1/2 c. beer (or water)
1/4 c. apple juice
1 (16 oz.) jar mild salsa
3/4 c. thinly sliced green onions
2 large garlic cloves, minced
2 T. chili powder
2 T. brown sugar
1 1/2 t. cumin
1/4 t. dried oregano
1/4 t. black pepper
1/8 t. dried coriander
Dash of cloves
1/4 t. liquid smoke
1 bay leaf
1 (15 1/2 oz) can dark red kidney beans, drained and rinsed (optional)
1 (4 oz.) can chopped green chilies
1 c. cooked brown or white rice
2 T. thinly sliced green onion tops

Toppings: Sour Cream, cheddar cheese

Cook sausage in large Dutch oven for 3 to 5 minutes; drain in colander. Spoon sausage onto paper towels. Return sausage to Dutch oven. Add chicken broth, beer, apple juice, salsa, 3/4 c. green onions, garlic, chili powder, brown sugar, cumin, oregano, black pepper, coriander, cloves, liquid smoke, and bay leaf. Bring to a boil over medium heat, stirring occasionally. Reduce heat; cover and simmer 30 minutes, stirring occasionally. Stir in kidney beans and green chiles; simmer 25 minutes, stirring occasionally. Remove bay leaf. Stir in rice and green onion tops; cook until thoroughly heated.

To serve, ladle into bowls and top with sour cream and cheese
