¾ C Heavy Cream
¾ C NABC Black & Bluegrass Ale
½ ea Vanilla Bean
1 tsp Vanilla Extract
5 ea Egg Yolks
½ C Sugar
2 Tblsp Sugar in the Raw

Directions:
Directions:
1) Preheat Oven to 300° F
2) Cut Vanilla Bean in half and scrape out inside into Stainless Steel Saucepan, add Cream & Beer as well
3) Cook over medium heat until it starts to bubble, remove from heat and let sit for 15-20 minutes
4) In a bowl combine egg yolks and Sugar, Whisk until Frothy
5) Slowly add cream mixture and Vanilla Extract to egg yolks and whisk until well combined, Strain Through Chinois
6) Place Ramekins in a baking Dish and Fill each with Custard
7) Place Baking Dish in oven and fill with about 1 inch of water (this will help dissipate the heat so that the custard does not curdle)
8) Bake for about 45 minutes until the Custard is set (Slightly wobbly in the center)
9) Remove from Heat and allow to cool to room temp, and then place in refrigerator to cool
10) Once cool, cover the top of custard with a thin layer of Sugar in the Raw and use a torch to caramelize, garnish with fresh fruit, especially berries
