Fruit Mixture:
1 lg. can sliced peaches
1 lg. (1 lb 4 oz) can pineapple tidbits
2 (10-oz.) jars Maraschino Cherries
6 1/2 cups sugar

Cake Mixture:
*There will be enough fruit for 3 cake batches, so triple cake ingredients.
1 Butter or Pineapple cake mix
2/3 cup Oil
4 eggs
1 box (3-1/2 oz) vanilla instant pudding mix
1/3 of the fruit, slightly chopped (1-1/2 cups)
1 cup walnuts or pecans (chopped)
(Optional: 1 cup coconut and/or 1 cup raisins)

DAY 1 - Combine:
2-1/2 cup sugar
1-1/2 cup starter (if no starter, use 1 packet of yeast)
1 lg. can sliced peaches, with juice

Stir together in a gallon jar. Leave jar on counter and keep lid closed. Do Not Refrigerate. Stir mixture every day with a wooden spoon.

DAY 10 - Add to jar and continue to stir daily:
1 lg. can pineapple tidbits with juice
2 cups sugar

DAY 20 - Add to jar & continue to stir daily:
2 cups sugar
2 (10 oz.) jars Maraschino Cherries, drained

DAY 30: :
Drain liquid from fruit. (Liquid is your Starter). Divide fruit into thirds. Divide juice into 1-1/2 cup batches. Put juice in tightly sealed jars and give to friends with copy of this recipe so they can start their bread. The Starter should be used within 5 days. DO NOT REFRIGERATE ANY OF THE ABOVE MIXTURE, AND ONLY USE WOODEN UTENSILS!

FOR CAKE:
Preheat oven to 350º. Mix all ingredients together with a wooden spoon. Do Not Use Electric Mixer! Bake in greased bundt pan (or 2 loaf pans) for 1 hour. Remove from oven and cool in pan(s) about 10 minutes. Remove from pans, cool, then wrap in Saran Wrap.

If you want to speed up the process, you can add all the fruit and 6 Cups Sugar at one time to the Starter. The mixture will then be ready to cook within 10 days. This cake freezes well for up to 6 months.
