1 medium chopped onion
½ lb. grated cheese
½ cup of chopped bell pepper (optional)

Directions:
Mix everything together except for the chicken, tortillas and grated cheese.

Spray bottom of baking dish with Pam. Soak about tortillas in the broth used to cook the chicken in (the tortillas will probably fall apart – that is ok). Layer the tortillas on the bottom of a baking dish.. Put chicken pieces on top of the tortillas. Put the soup mixture on top of the chicken. Sprinkle grated cheese then repeat the entire process at least twice. (I usually do this for the second layer mix 1 more can of cream of chicken soup and 1 can of rotel tomatoes.)

Bake at 375’ for 30 –35 minutes.
