3 red or green bell peppers, sliced thin
1 large yellow onion, chopped
12 ounces fresh mushrooms, sliced
1 tbsp dried thyme
1 tbsp dried oregano
2 cloves garlic, minced
2 tbsp olive oil
Salt and black pepper
1-1½ pounds Italian sausages, mild or hot
1 pound penne pasta, cooked
Parmigiano Reggiano cheese, grated

Directions:
Directions:
Saute peppers, onions, mushrooms and spices in preheated skillet with 2 tablespoons of olive oil until softened, Seaon with salt and pepper to taste and remove from skillet. In same skillet saute the sausages, then drain fat if necessary. Cut into one inch slices.
Combine sausage and vegetables with hot cooked pasta and sprinkle with Parmigiano Reggiano.
