• 3 cups flour
• 2 cups sugar
• 1 cup Chocolate Malt Ovaltine®
• 2 teaspoons cinnamon
• 1 teaspoon salt

• 1 teaspoon allspice or nutmeg (or ˝ teaspoon of each)
• 2 cups soured skim milk*
• 2 teaspoons baking soda
• 2/3 cup oil
• 2 teaspoons vanilla extract

Directions:
Directions:
• Preheat oven to 350° F.
• Sift flour, sugar, Ovaltine®, cinnamon, salt, and allspice/nutmeg; set aside.
• Mix milk and baking soda in large bowl, beat-in flour mixture.
• Add oil and vanilla gradually.
• Pour immediately into oiled and floured pan(s).
• Bake at 350° F. for 35-40 minutes, or until set.
• Cool 10 minutes and remove from pan.
• Don’t under-bake – falls easily.

* To sour milk, pour four teaspoons of lemon juice or white vinegar into a two-cup liquid measuring cup and add milk to make two cups. Keep in warm place (or stir over very low heat a minute or two, stirring constantly), until milk curdles.

50 years ago, while in his late 30s, my dad developed health problems related to cholesterol, and the number of eggs he could eat were severely restricted. Mom made this (eggless) cake many times, and it remains my absolute favorite.
