Olive oil
4 large red and/or green peppers, cut into quarters
4 large baking potatoes, halved
4 jalapeņo peppers (optional)
4 slender zucchini, halved
4 large tomatoes, halved
4 medium yellow onions, halved
Salt and black pepper
Chopped fresh parsley for garnish

Directions:
Directions:
Preheat oven to 350 degrees.
Rub olive oil over all vegetables and salt and pepper.
Bake until just tender:
Adding the vegetables to one large baking sheet in order:
Set timer for 30 minutes and put potatoes and onions on the baking sheet.
When timer goes off, add the peppers and zuccinin to the same baking sheet and set the timer for 15 minutes.
When timer goes off add the tomatoes to the baking sheet and set timer for 15 more minutes.
After all vegetables are done, season with olive oil and salt and black pepper to taste.
Garnish with parsley if you wish.
Serve warm or at room temperature.
