1 head of cauliflower
About 2 cups of unseasoned bread crumbs
2 eggs
One stick of butter

Directions:
Directions:
Steam cauliflower until just tender enough to insert a fork.
Cut into florets.
Break eggs into a bowl and add a bit of water to thin it out.
Place bread crumbs on a plate.
Melt about 1/2 stick of butter in large skillet.
Dip a floret into egg mix, then breadcrumbs.
Add breaded florets until skillet is full.
Brown all sides, turning with a fork. Remove from skillet when browned and add rest of florets. May need to add the rest of the butter to complete browning all pieces.

Place whole head of cauliflower in sauce pan and add about two inches of water. Cover pot and bring to a boil. Watch carefully so it does not scorch. Remove from heat when you are able to insert a fork . If it overcooks it becomes too mushy to fry.
