6 boneless skinless chicken breasts
½ tsp. salt
⅓ c. mayonnaise or Miracle Whip
3 T. Dijon mustard
½ tsp. pepper
2 cloves garlic, finely chopped
1 lb. new potatoes, each cut into 6 wedges
chopped fresh chives

Directions:
Directions:
1. Heat oven to 350º. Line roasting pan with aluminum foil. Spray pan with cooking spray. Arrange chicken on pan and sprinkle both sides with salt.
2. Mix mayonnaise, mustard, pepper and garlic in a large bowl. Brush about 3 T. mixture on chicken breasts.
3. Add potatoes to remaining mayonnaise mixture and toss. Arrange potatoes around chicken.
4. Bake uncovered for about 45 minutes total, turning potatoes halfway thru cooking. Check chicken and potatoes for doneness after about 30 minutes as times vary with size of chicken and potatoes. Sprinkle with chives.
