4 loin pork chops, bone in, no more than 3/4 inch thick
Salt and black pepper
1 ½ cups unseasoned bread crumbs
1 Egg
1/2 stick butter
1/4 cup vegetable oil

Directions:
Directions:
Preheat oven to 350 degrees.
Add butter and vegetable oil to oven approved skillet and heat.
Pat pork chops dry.
Season both sides with salt and black pepper.
Break egg into bowl and add a bit of water to thin and mix well.
Put bread crumbs on a plate.
Dip pork chops into egg mixture then bread crumbs.
Place pork chops into skillet that has been heated to the point where a drop of water pops when flicked into oil.
Brown on both sides.
Remove from skillet
Add trivet to same skillet and return pork chops to skillet.
Add water to cover bottom of skillet to about 1/4 inch.
Cover skillet tightly with foil.
Bake for 1 hour.

Be careful removing foil after baking, it will release a lot of steam.
Also, chops will stay hot for at least 30 minutes after removing from oven if you do not remove the foil.

Cast iron skillet works great for this recipe.
