Layered Polenta and Spaghetti Squash Recipe

1 medium Spaghetti Squash
4 T. butter
1 tsp. dried basil
1 tsp. salt, pepper to taste
8 oz. packaged prepared polenta, prepared according to package directions
2 c. spaghetti sauce, with or without meat
2 c. shredded mozzarella cheese

Preheat oven to 350º
Cut spaghetti squash in half lengthwise and remove seeds. Set the halves, cut side down in 2 inches of water in a pan and boil 30 minutes or until squash can be pried away from the shell with a fork. Shred the squash from the shell with a fork until it appears like strands of spaghetti. Toss the hot spaghetti squash with butter, basil, salt, and pepper.

Lay half of the squash mixture in a deep casserole dish. Next, place 1/3 of the cheese over the squash, then half the polenta, and finally half of the spaghetti sauce. Repeat the layers, ending with the remaining cheese. Bake at 350º for 25 minutes or until bubbly and heated through.
