Ingredients: Filling: 3 pkg cream cheese,softened 1 c. sugar 1c. chocolate chips 3 eggs at room temp. 3 T. cream 3T. flour (sub. tapioca flour for gluten free) 1 tsp. vanilla 1/2 tsp. salt
Crust: 1 pkg graham crackers 1/4 c. sugar 1/2 tsp. cinnamon 6 T. melted margarine
Gluten free crust: 1 1/4 c. ground nuts 1/4 c. sugar 1/2 tsp. cinnamon 2 T. melted butter
Topping: 3/4 c. sour cream' 3/4 tsp. vanilla chocolate shavings

Directions:Preheat oven to 400º Crush graham crackers to crumbs. Mix with 1/4 c. sugar and 1/2 tsp. cinnamon. Mix in melted margarine. Press mixture into a spring-form pan. Bake 10 min.
Turn oven down to 300 º Beat cream cheese, sugar and melted chocolate chips in mixer at medium speed. Add eggs one at a time, alternating with flour. Beat in remaining ingredients. Pour mixture into cooled graham cracker crust. Bake at 300º for 1 hour. Let cool and refrigerate 6 hours or overnight.
Mix sour cream and vanilla. Spread over cheese cake as a thin layer of icing. Sprinkle with dark chocolate shavings. Serve! |
