2-3 Large Onions - Peel and cut into very thin slices
3 T Butter - Peel and crush
6 Cloves Garlic
1 T Flour
1/2 Lb Gruyere or Swiss Cheese - Grated
Salt - to taste
Baguette
2.5 Qts Beef Stock
2-3 Springs fresh Thyme
Ground Pepper - to Taste

Directions:
Directions:
Large stockpot - melt butter, add onion, cover and cook briefly over low heat. Remove the cover and cook until onion soft and just golden. Sprinkle flour over onions and stir. Add Garlic, Stock and Thyme.Season with Salt and let simmer over medium heat for 30 minutes.

While it simmers, slice and toast baguette lightly on both sides. Float a few sliced pieces of baguetter on top of soup and garnish with cheese and fresh cracked pepper.
