COUSCOUS
2 C water
1 tsp salt
1 tsp Olive Oil
10 oz Couscous
SALAD INGREDIENTS
1 lg or 2 sm Carrots - peel & grate
1/2 med Red Bell Pepper - seed finely mince
2 medium celery Ribs - slice thin on diagonal
1/2 medium Red Onion - fine chop
1 sweet apple (golden del, Gala) - Core and 1/2 inch dice
1 med cucumber - peel, seed, chopp
1/2 C Golden Raisins
1/2 C toasted pine nuts
2 Green Onion - thin slice
1/3 C fine chop fresh cilantro
DRESSING
1/2 C fresh Lime Juice
1/2 C EVOO
1/2 tsp Ground Cinnamon
1/2 tsp Ground Allspice
1/2 tsp Ground Cumin
1/4 tsp Salt
1/4 tsp Cayenne Pepper

COUSCOUS
Combine water, salt, OO - bring to boil. Ad couscous stir well. Cover and revmoe from heat let stand 5 minutes the toss gently with a fork. Let cool completely, toss occasionally to ensure even cooling.
BUILD
Combine all Salad Ingredients with cooled Couscous
DRESSING
Combine ingredients in lidded gar and shake well to blend then mix into salad. Let stand at room temp 30 minutes before serving.
