1/4 cup butter
2 ribs celery
1/2 tsp. garlic powder
1 bunch green onions
4 cups chicken stock
8 large potatoes, cubed
1 tsp. cilantro
1 cup milk
1/4 cup flour
3 Tbsp. butter or oleo
salt and pepper to taste

Directions:
Directions:
Melt 1/4 cup butter in dutch oven. Add celery, onions, and garlic powder. Saute 1-2 minutes. Add cubed potatoes and toss to coat. Add chicken stock just to cover potatoes. Cover and simmer until tender. In a separate pan, melt the 3 Tbsp. butter, add flour and cook, stirring constantly 1-2 minutes. Add milk and bring to a boil to thicken, breaking up lumps. Add to the potato mixture. Season to taste. Makes 10 servings.
