2 tbsp olive oil
1 tbsp butter
2 shallots, minced
6 ounces of smoked salmon (shredded into small hunks)
1/3 cup capers
1 tbsp fresh dill or 1 tsp dried dill
1/2 tsp black pepper
1/2 cup brandy
1 ½ cups heavy cream
1 cup tomato sauce
1 pound cooked bow tie pasta (farfalle)

Directions:
Directions:
Saute shallots till melted.
Add salmon, capers, 1/2 of the dill and 1/2 of the black pepper.
Remove from heat.
Add brandy and flame.
After flames are gone, add cream and bring to a boil.
Boil till reduced by 1/2 (about 5 minutes).
Add tomato sauce and simmer another 5 or 10 minutes.
Add pasta to the pan, mix well.
Sprinkle with rest of pepper and dill.

This has an amazing flavor and is a great company recipe.
The flaming adds to the flavor, so be brave. When the pan is off the heat, tilt pan away from you and using a long handled lighter, touch the flame to the liquid. It will immediately ignite with a whoosh. Put the pan down (not on the heat) and wait for the flames to subside.
You can buy a small piece of smoked salmon in the grocery store, near the seafood section, often near the fake crab.
