Remove fat from turkey drippings, leaving just a tablespoon or two.
Heat the drippings and add a small amount of water, just enough to scrape up all the brown bits. Mix about 2 tbsp. flour in a cup of water and shake well so there are no lumps. To the drippings, add any saved potato, carrot or vegetable water (not too much if its strong like turnip), and add gradually to the pan. Thicken with the flour/water and stir constantly. If too thin, make more flour/water and add until the consistency you like. The more drippings, the more gravy you can make. If only a small amount of drippings, adjust water so as not to lose the meat flavor.
