2 cups water
1 1/2 tsp. salt
Approximately 1 2/3 cups flour
Ricotta filling: Mix large container of ricotta with 2-3 eggs, salt and pepper to taste and a handful of grated Romano cheese. May add fresh chopped parsley.

Beat eggs, water and salt well. Gradually add the flour until you have a thin batter. With a small ladle, gently pour onto a heated and lightly greased pan, while forming a circle with the ladle. Best to use a griddle if you can because you can make 5 or 6 at a time. Griddle temperature set at 350º. Turn them over with a spatula as soon as they are set. Should not brown. They should be about the size of a saucer. Stack them on a plate as they cook and keep covered as they need to be warm when you fill them. Fill each one with a small amount of ricotta filling. Fold each side over the filling and place on a paper lined cookie sheet. Freeze and place in a plastic freezer bag for later use.Bake at 350º about 30-35 minutes.
