6 to 8 c Corn Chips (Enough to fill the food processor)
1/2 c butter
Cooking spray

4 packages 8 oz cream cheese
4 eggs
1/2 c heavy cream
1/3 c chipotle pepper
4 tsp chili powder
1 c sauteed onion
1 c (4 oz) cheddar cheese grated (or pepper jack)
1/2 c cilantro

Directions:
For the crust: process the corn chips and add the butter. Pour half the crust mixture into a 9 inch spring form pan which is coated with non stick spray.
Mix all the other ingredients in a mixing bowl until very well blended, about 4 minutes in kitchen aid. Pour on top of crust. Sprinkle rest of crust mixture around edges of cheese cake so it touches all the way around the edges of the pan.
Add foil to the bottom of pan and bake in water bath 1 hour at 350. Turn off oven and allow to sit in oven 1 hour more. (goes great with fruit salsa)
