6 cups fresh or frozen cranberries
2 1/2 cups sugar
1 cup water
4 cinnamon sticks
10 large egg yolks
1 cup sugar
1/2 cup rum
3 tbsp lemon juice
1 1/2 tsp nutmeg
2 cups whipping cream
1 tbsp vanilla
32 ounces / 2 tubs mascarpone cheese
2 cups whipping cream
4 tsp sugar
1/4 cup brandy
1 1/2 cups sugar
1 1/2 cups water
1/2 cup rum
1 tbsp vanilla
3 pkgs lady fingers
chocolate shavings for garnish or sprinkle with cocoa

Simmer cranberries with 2 1/2 cups sugar, 1 cup water and cinnamon sticks over medium heat, stirring occasionally for 20 minutes, until most berries pop. Remove cinnamon sticks and set aside

For eggnog filling-
Whisk egg yolks with 1 cup sugar, 1/2 cup rum lemon juice and nutmeg over a pot of simmering water until doubled in volume. Remove from heat. In a separate bowl, whip 2 cups whipping cream with 1 tbsp vanilla. Then whisk mascarpone into egg mixture and fold in whipped cream. Chill until ready to assemble.

For whipped cream-
Whip 2 cups whipping cream to soft peaks , add 4 tsps sugar and brandy and chill.

For soaking liquid-
Heat 1 1/2 cups sugar, 1 1/2 cups water 1/2 cup rum and 1 tbsp vanilla until a simmer is reached. Cool to room temp.

To assemble, in a trifle dish . Dip lady finger biscuits in soaking liquid and line bottom of dish. Cover with one third of mascarpone filling and spoon in one third of cranberries. Repeat process twice. Top with whipped cream and garnish with chocolate shavings. Chill until ready to serve.

This makes a lot and is expensive so cut in half if other desserts are available. You could cut the cranberries with some raspberry if you want.
