2 pork chops about 8 ounces each
1 egg
1/2 tsp dijon mustard
1/4 tsp oregano
salt and fresh ground pepper
1 cup bread and or cracker crumbs
1 tbsp fresh grated parmesan cheese
1 cup nut oil or similar for frying

Directions:
Directions:
Trim fat from chops. Lay chops between 2 pieces of plastic wrap and pound with a mallet or rolling pin until meaty part is about half as thick.
Beat the egg in a shallow bowl with mustard, oregano , salt and pepper. On a large plate combine the parmesan and breadcrumbs.
Press each of the chops into the egg, coating each side. Then dip into crumbs, covering evenly. Dry slightly. Heat oil, cook chops until golden about 5 - 7 minutes per side.
