1 T. butter or margarine
1 large onion, chopped
3 C. chopped cooked chicken
3 (14 oz) cans chicken broth
1 (10 ¾ oz.) can cream of mushroom soup
1 (10 ¾ oz.) can cream of chicken soup
1 (8 oz) package spaghetti, broken into 2 in. pieces
7 celery ribs, finely chopped
6 carrots, finely chopped
1 t. poultry seasoning
1 t. pepper
1 t. grated lemon rind (I don’t use this)
2 C. milk
2 C. (8oz.) shredded sharp cheddar cheese

Directions:
Directions:
Melt butter in a Dutch oven over medium heat; add onion and sauté until tender. Stir in chicken and next 9 ingredients; bring to a boil. Reduce heat, and simmer for 45 minutes. Stir in milk; return to a simmer. Remove from heat; let stand 10 minutes. Sprinkle each serving with cheese.
