2 tbsp. margarine
1 onion, chopped
4 gloves garlic, minced
3 large potatoes, peeled and cubed
4 large carrots, peeled and sliced
1-2 L of chicken broth
1 head cauliflower, chopped
1 c. milk
1 tsp. salt
1/2 tsp. pepper
1/8 tsp. ground nutmeg

Directions:
In a sauce pan over medium heat, melt margarine. Add onions and garlic, cook until onions are very soft and translucent.

In a large pot place potatoes, carrots and cauliflower. Pour in chicken broth and bring to a boil. Reduce heat and simmer until vegetables are very soft and tender, 10 to 20 minutes. Remove from heat.

Cool slightly. Puree in blender. Ensure mixture is not too hot or it may crack the blender.

Return to pot on low heat and stir in milk, salt, pepper and nutmeg. Heat through.
