1 & 1/2 C. sugar
2 eggs
2 & 1/2 C. cake flour
1 & 1/2 C. cooking oil (I use less)
1 C. buttermilk
1 teaspoon vanilla
1 teaspoon soda
1 teaspoon vinegar
1 & 5/8 oz. red food coloring ( 2 small bottles)

Directions:

Beat eggs & sugar, oil & vinegar; sift flour & soda, add to mixture, add milk slowly & add coloring & vanilla.
Bake 25 minutes at 325º

Icing: 1 lb confectioners sugar
(1) 8 oz cream cheese
1 stick butter
1/2 c. pecans
Beat until creamy.
