1 cup wheat berries (also known as hard red spring wheat)
2/3 cup of honey
1/2 cup chopped walnuts
1 small apple (diced)

Directions:
Directions:
1) Roast wheat berries at 170ºF for one hour.
2) Place wheat berries in a small pot, cover with with water up to 1/2 inch above the wheat berries. Soak overnight at room temperature.
3) Bring to a boil, reduce heat, and simmer for 2-3 hours, stirring occasionally. If the berries look like they are drying out, add 1/2 cup of water and continue cooking. The wheat berries are finished when the berries puff up and break through the hull and the cooking liquid takes on an opaque syrupy consistency.
4) Thirty minutes prior to serving, remove from heat, add honey, chopped walnuts, and diced apple, along with a few tablespoons of boiling water to thin out the consistency of the liquid.
5) If you like it sweeter, you can add more honey or sugar.
6) Serve in small bowls as appetizer to main meal.

This dish was always served at my grandparents' Christmas dinner. It was the first dish, eaten on its own before the rest of the meal. Pryyemnoho apetytu (bon appetite!)
