1 1/4 cups warm milk (105 -115 degrees F)
1 pkg active-dry yeast
2 tbsp butter, softened, plus extra for greasing
1 2/3 cup white flour
1 tsp salt
1 egg, beaten

Directions:
Put half of milk into a small bowl. Sprinkle in the yeast. Let sit for 15 min. Melt the butter in the remaining milk.
Put the flour and salt into a large mixing bowl and make a well in the centre. Using a wooden spoon, beat in the yeast liquid, the milk and butter mixture and the egg to make a thick batter. Cover with a dish towel and leave in a warm place 1 hour, or until light & bubbly.
Grease a cast-iron griddle(pan) & warm it over low heat. Lightly grease the crumpet rings ( we use round metal cookie cutters) and put them on the griddle/pan. Spoon 2 tbsp batter into each ring. Cook about 3 min. until the sides are firm and browned. Using a metal spatula, slip the rings off the crumpets;do not touch the rings with your bare hands - they will be hot! Turn the crumpets over and cook the second side. Start another 2 crumpets alongside the first, using the same rings, cleaned if necessary. Re-grease the griddle if it becomes dry.
When the first 2 crumpets are done, lift them onto a wire rack to cool. To serve, toast the crumpets on each side under a broiler so the outsides become firm and dry, then butter them.
