Fresh String Beans (go to the Farmers Market or a local produce farm)

Wash string beans, snap off ends and discard. Snap the beans in half, if desired. Fill a large kettle with water.
While the water is heating, fill the sink or a cooler with cold water and ice cubes.
You will be "blanching" the green beans by placing them first in the boiling water and then into the ice water.
Add green beans to the boiling water. I have a large canner and can put in about 3 lbs at a time. Cook for 3 minutes. Use a timer. Carefully remove with a large slotted spoon and place into ice bath for 4 minutes.
Remove from the ice bath and place on a counter covered with bath towels (to absorb the water).
Once all of the green beans have been processed, pack the green beans into freezer bags, in the portion size you desire. For two people I pack 1 C. into each bag. I stack the bags in a baking pan and place it in the freezer. Once the green beans are frozen, I remove the bags from the baking sheet and stack them in a freezer basket.

Grab your significant other or a friend to do this with; it makes it go much faster. One does the blanching of the green beans while the other packs them in the freezer bags. These green beans taste much fresher than the ones you buy in the store.
