4 C. White Rice
2 Eggs, beaten
1 C. frozen Peas, thawed
2 Tbsp. finely grated Carrot
1/2 C. Onion, diced
1 1/2 Tbsp. Butter
1 clove Garlic, minced
2 Tbsp. Soy Sauce
Salt
Black Pepper

Scramble the eggs in a small pan over medium heat. Break down the chunks of egg into small pea-size bits while cooking.
When rice has cooled to near room temperature, add eggs, peas, carrots and onion. Carefully toss ingredients together,
In a large skillet melt butter over medium heat with the minced garlic. When butter has melted, add the rice mixture to the skillet. Add soy sauce and dash of salt and pepper, or to taste. Cook rice for 6-8 minutes, stirring often.
