250 grams salmon fillets
salt and pepper
2 teaspoons lemon juice
1/4 cup Parmesan cheese
8 rounds freshly ground black pepper
blanched asparagus and green bean, to serve (optional)

For the boursin cheese topping
1 cup cream cheese, softened, cut into cubes
1 tablespoon finely chopped fresh dill leaves
salt and pepper, to taste

Directions:

Preheat oven to 350ºF. Season salmon fillets with salt and pepper and sprinkle with lemon juice. Bake for 10 to 15 minutes. Remove from the oven and let cool.

Make boursin: Mix cream cheese with chopped dill leaves. Season with salt and pepper.

When fish has cooled, spread boursin on the top of the fish. Bake again for 10 minutes. Sprinkle Parmesan and black pepper over boursin. Broil until top is golden brown. Serve immediately with blanched asparagus and green bean, if desired.
